A Prefect Summer Salad

Some days, I just crave arugula. Lately, that has been almost every day.

Like quinoa, it is one of the easiest things to pair with almost anything, and in turn have a beautiful and yummy dish. This afternoon, I tossed it with pepper coated goat cheese, chicken, English peas, finely chopped walnuts and I mixed it all together with olive oil. Once combined, I tossed in the blueberries---so they wouldn't be crushed in the mixing. It's the perfect summer salad.

And yes, everything does taste better when eaten with your sterling silver flatware.
